This vinegar has a Mediterranean theme and flavour. It is made with oregano, rosemary, thyme, sage, ceylon cinnamon (pesticide, mycotoxin, and heavy-metal tested) green peppercorns –
whole pomegranate powder and yacon syrup.
Vinegar #2 has been lab tested by Campden BRI and found bactericidal against the following pathogens: Salmonella, Citrobacter, Staphylococcus, Pseudomonas, Yersinia, C. difficile, Campylobacter, Fusobacterium, Eggerthella, Vibrio, and Sphingomonas in vitro. You will receive laboratory documentation with your purchase.
Our vinegar begins with a base of raw apple cider vinegar and has not been homogenised or heat-treated at any point during the process, so the “mother” is still intact in the vinegar. You may or may not see evidence of this in your bottle. You may also notice a small amount of sediment: this is the natural residue of herbs from the steeping process.
Not sure which pathogens you have? Take a microbiome test.
Each of our vinegars has been tested for antimicrobial activity by Campden BRI Laboratories. The executive summary of the lab report for vinegar 2 is here. (Click to here to view full size)

Functional vinegars are vinegars infused with additional botanical ingredients that are designed to offer specific health benefits beyond those of traditional vinegars.
When we say that our vinegars have bactericidal properties, it means that they are able to inhibit or, in plain English, to kill disease-carrying bacteria.
“The mother” refers to a colony of beneficial bacteria involved in the creation and fermentation of the vinegar. It is rich in acetic acid and nutrients and is believed to have various health benefits.
Each functional vinegar has its unique blend of botanical ingredients aimed at targeting specific health benefits. These could include herbs, roots, and fruits like turmeric, ginger, and berries.
All our ingredients are sourced with a focus on organic and sustainable practices.
The health benefits vary depending on the botanical ingredients used. They may include improved digestion, enhanced immune function, and anti-inflammatory effects.
